It’s been a busy start to the week. Both Bob and I had two full days of mandatory meetings, and therefore had substitute teachers in our classrooms.
We just got back to our classes today. Along with piles of grading and catch-up work. Eek.
So, in the spirit of Keep It Simple, Silly, here’s our KISS dinner of the week!
We snacked on crudités as we waited for our dinner: Baked Mahi Mahi (325°F for 25 minutes, seasoned with dill, black pepper and a touch of salt) . . .
. . . . served over a bed of organic arugula (from our box ‘o goodness!) with a drizzle of balsamic reduction.
Light, healthy, and very tasty. Oh, and EASY. :)
Time to get back to more grading!

What a wonderful, simple meal (guess that’s the point of KISS-ing). Looks so delicious; I love that balsamic reduction.
Is Mahi mahi a very fishy fish? I tend to like more meaty white fish, like sea bass. I know I need to incorporate more seafood in our diet, and I am the only one holding us back!
No–it’s a “meaty”, mild fish. We use it for fish tacos, too. I would also recommend sea bass, halibut and tilapia. All are really good!
I love mahi mahi! It doesn’t get much better than that!
