Lighter Nog

Happy New Year!  Bob and I had a low-key evening last night, but we enjoyed it that way.  We ordered sushi as carry-out from Wildfish, and along with some salad and roasted kabocha, we dined in the comfort of our own home.  It was nice to watch the live music on television and enjoy our Christmas tree before it comes down in two days.

We started the evening with a little nog, to set a festive tone.  I used to love eggnog, but over the past few years, it hasn’t sounded very appealing.  It’s become too heavy and rich for me.  So, I experimented a bit, and this turned out to be quite nice!

Lighter Nog

Lighter Nog (serves 1 – 2)

  • 1 small frozen banana
  • 1 c. almond milk
  • 1 medjool date, pitted
  • 1/8 t. cinnamon
  • 1/8 t. nutmeg
  • 1/4 t. vanilla extract
  • 1/4 t. run extract

Directions:  Combine all ingredients in a high-speed blender, and blend until smooth.  Serve immediately with a garnish of nutmeg.

Of course, you can add real rum if you’d like!  But I’m telling you, it was perfect as-is.

On the other hand, now seems like the perfect time to begin moving away from the nog, and back to some nutrition-packed smoothies.  Today marks the beginning of a 7-day green smoothie challenge that Bob and I are both doing!

    Yay! Green Smoothies! I started drinking them beginning of December and have been doing so for a month. It works magic for the digestive system in my case ^^

  5. Oooh, that egg nog sounds tasty! I used to like it when I was younger but now I get a little grossed out by it. Eggs and milk don’t sit to well with my tummy. However, this one might be perfect for me! I love the idea of a green smoothie a day! Didn’t happen today with all the sickies in our house, but I’ll start tomorrow!

  6. I have heard great things about that sushi place. We’ll have to check it out! I have never liked egg nog but I think I’d like your version. Cheers to Green smoothies. I find it harder to make them in the winter when I am cold and not staring at gorgeous green kale at the farmer’s market each week but did pick up a tub of spinach at Costco. You’ll have to share what concoctions you guys are drinking!

  12. I loved Soynog this year! My momma has always made homemade hard eggnog and I’d enjoy a sip or two, but I agree that it’s veryyy heavy so a little goes a long way… This actually reminds me of a eggnog smoothie, yum :)

  13. That nog looks delicious! I bet the banana adds a great sweetness and tastes awesome with all of the fun spices :)
