Raw Thai Tempeh Lettuce Wraps

Lettuce wraps are genius!  I’ve definitely been on a kick with them lately, since I’ve had bibb lettuce in the house.

A couple of weeks back, we had Korean lettuce wraps.  And then, we were fortunate enough to have 2 full heads of bibb lettuce in our produce box from John, so we’ve used them for wraps as well!

For this round, I was craving Thai!

 Raw Thai Tempeh Lettuce Wraps (serves 2)

  • 1/2 tempeh package, crumbled
  • 1 T. lime juice
  • 1 T. rice vinegar
  • 1 T. tamari (or soy sauce)
  • 1/2 t. garlic, minced
  • 1 t. ginger, minced
  • 1 t. chili paste
  • 1 small carrot, matchstick slices
  • 1/2 zucchini, diced
  • 1 small head of bibb lettuce, leaves separated and washed
  • optional: peanuts for topping

In a small mixing bowl, combine all the ingredients from tempeh to zuchhini.  Stir well and set aside for about 15 minutes.  This will allow the flavors to marinate the tempeh and veggies.

Serve with the bibb lettuce leaves, and if desired, peanuts.

MIWFY:  This recipe is vegetarian/vegan and raw.  You can substitue any cooked ground meat, if you prefer.

    I used to LOVE tempeh, but it’s been so long since I’ve had it, and I’m not sure how my stomach would handle it. I listen to my stomach a lot better than I used to, so I feel as though I tolerate things differently……or I guess I’m just more aware of how foods affect me! The texture is amazing though!     I should try this, and if I can’t deal with the tempeh, I bet it’d be great with chicken or bison too! :) thai flavors are always amazing

      Is it because it’s fermented that it bother’s your stomach? Do all fermented foods bother you? Great link–takes me down memory lane–I totally remember reading about these on your blog, back in the day. You know, along with GC tofu and snack plates! :)
