I really can’t complain. I had an unexpected 3-day work-week. Three cheers for a perfectly timed snow-day, right? :) So here we are . . . . it’s Friday already! Excellent.« Continue »

How is October over?!? Time is flying!
Here’s our KISS meal of the week: Baked Salmon with Dill Cauliflower “Rice”
While we like finding a great Pinot Noir to pair with salmon, this week we threw caution to the wind, and opened a bottle of Gelfand Cabernet Sauvignon. Go big, or go home. :)
We eat salmon pretty often, but serving it with cauliflower “rice” was a different (and great) compliment. « Continue »
Why do most pumpkin recipes only use a portion of a can of pumpkin? It’s very rare that I find recipes that call for an entire can. Drives me crazy!« Continue »

Bob and I spent a few days in Paso Robles, CA during our honeymoon (summer of 2011). What a beautiful area, with vineyards galore!
The other night, Bob and I planned a “date night”, where we decided to pull together a fancy dinner. We also decided to open our last bottle of wine that was purchased on our honeymoon. What a fabulous pairing we had!« Continue »
I was craving a comfort meal that would come together in a minimal amount of time. This took 45 minutes, start to finish. Not bad. And with the weather turning cooler, it totally hit the spot!!!
Chicken was on our menu plan last night, but I wasn’t in the mood for our regular grilled chicken. I wanted something with a little more pizzazz.
We were both pretty hungry, so I had to figure it out quickly. I rummaged through the kitchen, found a few ingredients that “spoke” to me, and pulled together a rather tasty dinner within 40 minutes, start to finish. Not bad!
I decided to try something a bit different . . . a side dish strikingly similar to mashed potatoes. Without the potatoes. Made with healthy veggies (who knew cauliflower could be used as pizza crust and faux mashed potatoes!) and an extra protein kick (thanks to the greek yogurt), it turned out to be quite tasty and very easy to pull together.
Yes, the crust of this pizza is made from cauliflower. Not a problem in my veggie-lovin’ eyes. But I wasn’t sure how it would go over for those eating with me. I read recipes online, and researched the pros and cons of different variations, before my first attempt. I’m excited to say that my version pleased both friends and family!« Continue »
