Warm Up with Cauliflower Lentil Curry
I was craving a comfort meal that would come together in a minimal amount of time. This took 45 minutes, start to finish. Not bad. And with the weather turning cooler, it totally hit the spot!!!
Italian Stuffed Chicken Breasts
Chicken was on our menu plan last night, but I wasn’t in the mood for our regular grilled chicken. I wanted something with a little more pizzazz.
We were both pretty hungry, so I had to figure it out quickly. I rummaged through the kitchen, found a few ingredients that “spoke” to me, and pulled together a rather tasty dinner within 40 minutes, start to finish. Not bad!
Cauliflower and Turnip Mash
I decided to try something a bit different . . . a side dish strikingly similar to mashed potatoes. Without the potatoes. Made with healthy veggies (who knew cauliflower could be used as pizza crust and faux mashed potatoes!) and an extra protein kick (thanks to the greek yogurt), it turned out to be quite tasty and very easy to pull together.

Yes, the crust of this pizza is made from cauliflower. Not a problem in my veggie-lovin’ eyes. But I wasn’t sure how it would go over for those eating with me.
