I’m excited for the weekend, but definitely have a lot on my plate! Along with the usual running around (yoga class, grocery shopping and meal prep), I am taking my final test to earn certification as a health coach, fulfilling my supervision assignment at the school where I teach, and setting aside time to enjoy the Academy Awards ceremony. Whew! The weekend is jam-packed!

Happy New Year!  Bob and I had a low-key evening last night, but we enjoyed it that way.  We ordered sushi as carry-out from Wildfish, and along with some salad and roasted kabocha, we dined in the comfort of our own home.  It was nice to watch the live music on television and enjoy our Christmas tree before it comes down in two days.

Raw Summer Fruit Crisp

I’m not a big fan of making desserts . . . especially for other people.

See, whenever I try to make a dessert, I find myself on a mission to make it healthier.  Every once in a while, it works out.  Usually, though, it just tastes . . . . healthy.  If you know what I mean.

And that doesn’t bother me (heck, I’m a happy camper with a bowl of fresh fruit), but it doesn’t always go over well with everyone else.

However, the dessert I concocted for after dinner the other night was a winner!  Everyone loved it, and it was healthy!  Shhhh.  Don’t tell anyone.  Just give it a try!

Colorado Road Trip: Boulder

After 16 hours on the road, we are finally home-sweet-home!  I’m excited to cook in my own kitchen, sleep in my own bed, and get back to my gym!  First I need to unpack, but wanted to show a quick glimpse of our last few days of vacation, which were spent in Boulder, CO.  We really enjoy Boulder.  It’s a bike-friendly community, has one of the largest farmer’s markets in the country, and is home to quite a diverse population.  It’s the perfect ending to our vacation!

Colorado Road Trip: The best cookie ever!

Two years ago in Estes Park, CO, while ordering a cup of coffee, Bob saw a chocolate chip cookie next to the cash register and said to the barista, “I’ll take one of those, too.”  The sticker indicated that it was a vegan cookie.  Bob and I aren’t vegans, but it didn’t matter.  The cookie just looked delicious.

Little did Bob know what he was about to introduce into my life.  I usually only take a bite or two of his cookie (he’s a “cookie monster”, while I would usually rather have a piece of dark chocolate), but this time, I took over.  It was the perfect combination of soft and crumbly, with plenty of chocolate chips and chunks of walnuts.  Bob had to go back in and order another because he barely had any of the first.
