Three weeks until summer break!! I can barely contain all my excitement. This school year went by very quickly, but I’m also in need of some rest and relaxation before beginning another semester.« Continue »

Friday’s Five
Between days of nearly zero sunshine, and enough rain to make every river in the area cause flood warnings, I’m ready for the weather to shift into something more cheerful. I’m hoping this weekend is the turning point for us!« Continue »
KISS: Wine and Garlic Marinated Salmon
Through my friend, Amy, I was able to order some fabulous salmon recently. Holy cow. This was melt-in-your-mouth. « Continue »

KISS: Tempeh Sloppy Joe’s
For dinner the other night, I was craving the deep, rich flavors of sloppy joe’s. I reached for a package of tempeh that I had bought at Trader Joe’s, grabbed a few key ingredients, and had a batch ready in no time!« Continue »
KISS: Flaxseed Encrusted Barramundi
I’ve studied dozens upon dozens of dietary theories over the past year. I’ve heard about the pros and cons to every type of diet. There’s a study conducted somewhere that will support almost every opinion. But if there’s one thing that seems to be a common factor, it is the importance of Omega-3 Fatty Acids in our diets.« Continue »
KISS: Baked Mahi Mahi
What a great long weekend. Having the extra day off really made a difference in slowing down and catching up. I was able to enjoy some much needed down-time, cook some delicious meals, and listen to a few lectures/classes through IIN. « Continue »
KISS: Herbes de Provence Chicken and Vegetables
Just before the holidays I scored an amazing deal on a french oven. I’ve never owned one, and therefore never cooked with one, but after a little research I was ready to give it a try. « Continue »

Usually a KISS meal would be baked salmon and roasted butternut squash. But this time, I jazzed it up a bit–without really adding any extra work or time to preparing dinner! « Continue »
KISS: Roasted Green Chili Bison Burgers
When we’re not feeling creative, our bison burgers are usually just patties of, well, bison. No marinades, sauces, or special seasonings. Just the bison, formed into patties, cooked on the grill.« Continue »

KISS: Baked Salmon with Dill Cauliflower “Rice”
How is October over?!? Time is flying!
Here’s our KISS meal of the week: Baked Salmon with Dill Cauliflower “Rice”
While we like finding a great Pinot Noir to pair with salmon, this week we threw caution to the wind, and opened a bottle of Gelfand Cabernet Sauvignon. Go big, or go home. :)
We eat salmon pretty often, but serving it with cauliflower “rice” was a different (and great) compliment. « Continue »
KISS: Quinoa Stuffed Delicata Squash and Sauteed Swiss Chard
I hope everyone is having a great week! We are still swimming in winter squash around here (I’m not complaining!), so I’ve been including it in many of our dinners. « Continue »

We just got back to our classes today. Along with piles of grading and catch-up work. Eek.
So, in the spirit of Keep It Simple, Silly, here’s our KISS dinner of the week! « Continue »
